Hola Senioritas! (See what we did there?!) We are coming at you with an original Avenue 126 recipe today — the yummiest little chicken taco bake! And it is about as simple as they come! If you like Mexican food your taste buds will just adore this dish and if you don’t
WHAT THE HECK IS YOUR PROBLEM!?!? we think this might change your mind. It’s the perfect meal for a week night when you have 50 billion other things going on and you don’t feel like spending all afternoon in the kitchen. You will thank us later.
So here’s what you’ll need:
-2 large chicken breasts
-1/2 jar salsa (we used medium but whatever you like will work!)
-1 packet taco seasoning
-1/2 bag tortilla chips
-1/2 can black beans (drained and rinsed)
-1/2 can corn (drained)
-1/2 can diced tomatoes with green chiles (drained)
-1/2 cup shredded lettuce
-1 cup cheddar cheese
Optional toppings and sides:
-diced avocado (or whip up some guacamole like we did!)
-extra chips and salsa
Here’s how you do it:
Start by placing your chicken, salsa, and taco seasoning in the crock pot and cook on high for 5-6 hours or low for 7-8 hours until you can shred the chicken with two forks easily. (If you don’t have hours on your hands and you are wanting to make dinner now, sub for rotisserie chicken or taco seasoned ground beef/turkey)
Once your chicken is ready, preheat your oven to 350 degrees and spray your baking pan with non stick spray. Then put your tortilla chips in the bottom and crush. On top of your chips, layer your cooked chicken, followed by your beans, corn, tomatoes & chiles, and top with cheese. Bake for 10-20 minutes or until everything is warmed through and cheese is melted. Serve with toppings listed above or enjoy on its own!
